Safe Grilling to Reduce Cancer Risk

Barbecuing isn’t over yet as we try to stretch these summer months with outside grilling. But there are some things to be aware of.

When grilling any kind of meat, make sure you marinate it with an herbal dressing before heating it up. This is because animal proteins contain human carcinogens called heterocyclic amines (HCAs). These chemicals get released when exposed to high temperatures. By marinating your meat, you reduce the risk of the meat forming HCA’s by 80%. Grilling carries the greatest risk followed by frying and broiling.
